Well, corner of my eye is a set phrase.
As for, corner of my eyes, that's one corner and two eyes. As for, the corners of my eyes, that's OK too, but it could mean one eye is looking left and the other right. <hehe> I'd stick with the set phrase. There seems to be a reason it's set.
