In the context of your dialogue, I don't see anything wrong with the second speaker's utterance. It follows and it's clear what the speaker means, so I think it's OK. Speaking is much more about meaning that ensuring that we follow on from the previous speaker perfectly grammatically and logically. Something like 'And it's another beautiful day today' would be more likely, but what you put would follow without any confusion IMO.
