If you analyzed the Red Team and Green Team, you might write down on a sheet of paper the strengths of each team. After you are finished this analysis you might find that there are more perceived strengths for the Red team. So...on paper, according to your analysis, the Red Team should win. But like any analysis, it could be flawed. So when someone is whining about losing a bet on the Red Team he could say "On paper the Red Team should have won!!!"

A fox is a tricky animal. So in this context, foxing them means that he has many tricky moves when he plays.

I believe "in the twelfth minute" is a soccer term meaning a specific time in the game. When they report an event or goal in the game they mention the minute it occured.
