'One' refers to flavor, not ice cream; i.e., I prefer either one of those flavors:

A: I had vanilla and chocolate ice cream for dessert. Which would you rather have?
B: Either one [flavor]. They're my favorite flavors.

1. Either one.
2. Neither one.
3. Two of them.
4. I'd prefer none.
