I'll just expand on 'choose your wild card' a bit.

A wild card, in a card game, can have any value the player chooses. Traditionally, in many games, the two is wild (and the dealer, to prevent misunderstandings, says 'deuces wild'). In other games some lucky person gets to choose which card is wild. 8 card stud* is (or can be - I'm not sure whether it's invariably like that) such a game.
