Default Brittish/American spelling

I have a couple of questions concerning Brittish vs American spelling;

summarize or summarise: is the -is-form the correct Brittish spelling, or does it matter?

vulcanization or vulcanisation (or maybe curing?): which is the correct Brittish spelling? (it is a term within rubber manufacturing)
