I broke my leg skiing is correct.
You have a combination of two actions:
short = you broke your leg
long action = you were skiing

you can also say:

I broke my leg while skiing.

The Adverb While is left out because of the use of two simultaneous actions: short and long.

Your second sentence:
"I sang driving" does not sound correct. Singing suggests a long action and it can't go together with another long action verb "driving" without separating them with the adverb "while".
