"No one is in a position to make a more accurate judgment of my work than me."
Which would be the best way to explain to a student that I should be used instead of me: "No one is in a position to make a more accurate judgment of my work than I." Or me is fine?

I think "me" is fine - complement of "than" as a preposition.
"I" is also possible, as the subject of the implicit clause "than I am".

I agree.
It might be worth noting that using "I" as the subject of an implicit clause is preferable in a formal style. I've got nothing against "than" as a preposition, however.
