I'd like to know the difference "someone new" and "someone you don't know".

i don't know what is your native language but in spanish that sentences means:
Someone new---> Alguien nuevo
Someone you don't know---> Alguien que no conoces

Someone new is someone you don't know, but you could use it in a different way. A new person at work might be someone new, and this sounds more natural.
