when I want to ask somebody about the taste of their food, which of the two structures above should I use?

It depends upon what type of information you are trying to get from the proprietor. Grammatically speaking, "What is your pizza like?" and "How is your pizza?" are both technically correct sentences. But in the context of actually asking this question at a pizzeria - well, it's very vague. What exactly do you want to know? (For example, if you are dining at an Italian restaurant that specializes in pasta dishes but also offers several types of pizza, you might ask your server "How is your pizza?" In this case, he understands that you are asking him how his restaurants's pizza compares to other places that sell pizza exclusively.)

I'm sitting in front of a pizza at an Italian restaurant, I taste it and it tastes good. I want to know my friend's opinion about her pizza, whether it is good or not.
