we didn't go without.I don't understand the meaning of the phrase "go without" in the sentence.

The sentence does not express a complete thought, something needs to be added. Go without is a phrasal verb; meaning: to not have something which you usually have. You can say:
We didn't go without a grammar book to the class some time ago..
You can not go without food and water for a long time.
I do not like going without sleep at night..
