Let us break the sentence:
1) Several of my favourity roles are that of a father, a son, a student or a teacher.
2) that i play on interacting with another person or other people
So here you need to link a prepositional phrase complimenting the subject roles.
It can be that of a father, a son, a student or a teacher.
