Equity is the union in the US that performers belong to.
An Equity theater will employee only performers who are members of the union (and the pay will probably be better).
However, your sample is hard to understand. Do you have a bit more context?
Is this the Gloucester that is in the US? If so, I would suggest their lower-case e is an error, and believe they mean that it follows the union guidelines in terms of pay, working hours, etc.
You can do a quick Google search to see that the phrase "an equity theater" is almost always capitalized.
