consider the following example:
1.this is what the findings of a new survey released Wednesday say.
after inversion, it becomes:So say the findings of a new survey released Wednesday.
i don't know what is the meaning of "So say".How do i explain it?

In the example you gave, "so" means exactly the "this" of the previous sentence. In the context it refers to a previous information give. For instance:
"It is difficult to master English grammar without reading good books. So say the English teachers."
In the above example "so" refers to the fact that "It is difficult to master English grammar". The last example is equivalent to "This is what the English teachers say."
