1. It's astonishing that she should say that sort of thing to you.
2. It's astonishing that she would say~~.
3. It's astonishing that she says / said that ~~.

I think I'd be more likely to use the first if she were rude and the third if I thought she was lying. However, there isn't much difference IMO.

To me,
1. obligation (should have to)
2. conditional (would . . . if, in that situation)
3a. 'says' present fact or habit
3b. 'said' past fact
