Default Why not "Thank(s) God!"?

Why do we say "Thank God!" and not "Thanks God!"?
Is this a metter of grammar or something else?

It's a subjunctive. You aren't actually talking to God, so it's not "Thanks, God." You're saying 'may God be thanked' or something like that.

Additionally,

Give thanks to God! (Plural Noun)
Thank God! (Verb, imperative)
