What does the term "Champaign can wait" mean and when it is used.

It's not a regular saying or idiom if that's what you were thinking. I assume you've read it in a text somewhere (context always helps in these threads). Generally, if you say anything "can wait" it means that you have something more important (or more fun!) to do before you do that thing.

- Let's get champagne.
- Champagne can wait. I have something very exciting to show you.
- What?
- My new diamond necklace.
- Wow! You're right. The champagne can wait!

After the main course of a meal:
- Shall we have coffee?
- Coffee can wait. I want dessert first! It looks really tasty.

"The champagne can wait" (note spelling) can also mean "It's not time to celebrate yet."

A: Hey, let's go to the pub and celebrate the end of exams!"
B: The champagne will have to wait. I still have one exam to go."
(Note that 'champagne' is used metonymically in this case for any type of alcohol).

Police Sergeant: We can finally celebrate catching the criminal!
Detective: The champagne can wait. We haven't got his confession yet.
Here it doesn't even mean alcohol necessarily. It just means that they can't celebrate yet.
