    Default noun or adjective

    the most famous of all the stars. Is the underlined a noun phrase or an adjective phrase?
    An adjective can be converted into a noun after preceding it with "the".
    Is this the case?

    Depends on how it is used.

    You should state the entire sentence so you can figure out its job.

    The most famous (star) of all the stars is Sirius, the brightest (star). Star has been elided leaving 'most famous' which we then have to interpret as a noun. Ditto 'brightest'.
