Well, first I must say that this is an awful set of questions-- very poorly written. Now:
1-- 'am' is the correct answer: the verb should agree with the second pronoun.
2-- both 'saw' and 'watched' are equally acceptable.
3-- 'Something didn't happen' is the correct grammar, but the sentence is extemely odd.
4-- 'He is so nice a person' is the answer, but this sentence is incomplete: 'He is so nice a person [that he never frowns].'
5-- 'Were he' is right.
