Are these sentences correct:
1-As many people know that as have studied physics.
2-Not as many people know that as have studied physics. (Some people have studied physics but don't know that.)

Yes, those are fine. I might want to shuffle the parts a bit:

1-As many people as have studied physics know that.
2-Not as many people as have studied physics know that.
