I suppose it means whatever the Kodak company's advertisers wanted it to mean. It doesn't mean anything to me.

This is a Kodak carousel:
KODAK: Slide Projectors Family: CAROUSEL Projectors

These machines were used back in the Dark Ages to bore friends by showing photographs by projecting light through a coloured piece of plastic (a slide) onto a wall or screen.
I imagine a "Kodak carousel moment" is a time when you should have your camera handy - eg. when your child takes its first step. But I'm not sure either; does that fix the context?

it really confused me.

It's apparently an in-industry reference - that is, one that only advertising industry insiders understand.
If you're really interested, do a search for "Don Draper" "Kodak carousel".
That will give you a few hits and some YouTube videos; but I couldn't be bothered following them for the meaning.
