What's the difference in meaning between in the mountains and on the mountain?

in the mountains means that something is in a mountainous area - surrounded by mountains
on the mountain means that something is positioned on one particular mountain

I am surprised that you haven't used punctuation or started with capital letters. Why the apostrophe after "mountains"?
