Do you love riding roller coaster?
I heard someone ask: do you love riding roller coaster?
My gut tells me that it is not correct English, for my teacher always says you must say 'I love eating apples' rather than 'I love eating apple'.
So should the line be: do you love riding roller coasters? Or how about do you love riding a roller coaster?

You would only say "the" roller coaster if talking about a specific one and not all of them in general.
