As fivejedjon wrote both are fine. And both are grammatically correct. Perhaps there is a subtle diffrence in the meaning:
1- I find it interesting to learn English.
It is about your exprience with learning English. It says that you personally like learning English.
2- I find (that) it is interesting to learn English.
It is also about your exprience, but in this way you say it more as an opinion:
"I find that children need a lot of encouragement"
