"Hey" is slang. It can be impolite if used to address someone you do not know. On the other hand, it can be a form of "Hello" among friends.
Gosh and gee are euphemisms to avoid saying "God" or "Jesus." They are generally not considered impolite, but they are slangish.
"Damn" is a mild "swear" word. I wouldn't want my small child saying it, but it is heard on broadcast TV.
Dirty language and dirty words are basically the same thing.
