I've got a bit of trouble to understand this quote from a musician:

"We feel so much about what we do on stage."

What does "feel about" here? Does that mean that they have a very strong opinion about what they do or does it suggest that it "affects" them emotionally?

It means that they have a strong emotional connection to what they do on stage.

As Humpty Dumpty said in Through a Looking Glass, "When I use a word it means exactly as I want it to mean, nothing more, nothing less" and so it would be with your quote. It is whatever the speaker/writer intends it to be. But without any other information/context, my inference is that the person is emotionally involved in acting.
