of the animal. “We all have.”
Is "slide off" used here in a meaning stroking the back of the animal? and is “You’ve been through a lot.” used in the meaning to endure?

You don't give us the context here, but she had almost certainly been riding a horse bareback (without a saddle). In that situation, the rider throws one leg over the horse's back and slides gently off.
