    "A ten-hour contract" is the most natural.

    As for the last one, should it be used with or without the indefinite article?

    a 10 hours' contract / a three weeks' holiday etc
    or
    10 hours' contract / three weeks' holiday etc ?

    It seems to me only the latter is correct, but I won't be surprised to learn the opposite.
