Infinitive or Gerund?

I'd like to know what is the correct sentence.

I listened to him saying that .... or ... I listened to him say that...
I heard him saying that... or I heard him say...

Infinitive or gerund after "him" ???

I would use heard him say if I heard everything, and heard him saying if this was part of what he said. I wouldn't use listen here.
