He is suspected of selling a fake watch to Melinda and he says "highjack". Is it "fake" or something? He is contradicting her saying he didn't sell a fake, and to the contrary, Melinda is faking him with a replaced junk watch.

He might be using "highjack" in the general sense of illicitly taking control of something for your own purposes. So the guy is saying: "How do I know that you're not dishonestly taking advantage of me just to get some money out of the situation?"
