    Is the following sentence acceptable?

Have you ever dreamed of being an esteemed worker when you grow up?

No. Grammatically it is fine, but we do not normally speak of 'esteemed workers'.

An unusual sentence. A "respected" or "valued" worker might sound better.

    ***** NOT A TEACHER *****

    (1) The two teachers have given you and me excellent answers.

    (2) I think that a person never uses a word such as esteemed to

describe him-/herself. It would be "immodest" to do so. You need

to wait for OTHER people to use that word. For example, at a dinner

meeting, someone might introduce YOU with these words:

I now wish to introduce my esteemed colleague Ashiuhto, who

    will now deliver tonight's presentation.
