The word "exercise'' is uncountable if it is related to health like ''Do some exercise'', but if I say ''Physical exercises should be mandatory in schools.'' can I use the plural form of the word exercise.

I wouldn't recommend. "Physical Exercise" is the actual name of the subject in schools, at least in BrE - we shorten it to PE. I believe in AmE it's known as Physical Education, shortened to Phys Ed.
