How do you answer the question, "What's up?" I encounter this almost daily at work?

Not much. You? -- Most common answer.

Same old, same old. How about you?

Happy it's Friday. What about you?

Just as when someone says "How are you?" the expected answer is "fine, thanks, and you?" the question "What's up" does not look for you to really say all that is new with your life.

When people say that you can give a concise answer of how you are or what you are doing. Then you can ask 'What about you?'

In BrE, 'What's up?' is not a normal greeting.We tend to use it in these situations:
1. There is a unusual activity, or an unusual amount of activity. We are asking, "What's going on/What's happened/What's happening ?"
2. The person we are talking to looks sad/angry/distresed. We are asking, "Why are you feeling like this?"
