What does "with one eye on the other" mean?
Found in a context where they are talking about a man able to do several things at once.
"He does everything with one eye on the other"
Is it saying he does a different thing with each eye?

Without more precise context, it is meaningless to me.
Well, the text talks about a film director shooting a movie in which he is also an actor. And so, another actor from the picture is amazed for this skill of doing two things at the same time.
So he exclaims: “I don’t know how you do it as an actor to be in the moment and also be outside the moment at the same time as a director, but he handles it very well. I guess he does everything with one eye on the other, but it doesn’t show.”
