Please look at this sentence.

Arguably Arsenal’s most perturbing signing of the summer was that of South Korean striker Park Chu-Young.

I think it is OK when I write the sentence above like this:
Arguably Arsenal’s most perturbing signing of the summer was South Korean striker Park Chu-Young.

Does "that of" mean "signing of" ?

I would really appriciate it if you answer my question. ^^

Yes, 'that of' is 'the signing of'.

Please give your threads a more helpful title. 'that of?' would have been good for this one.

Actually, at first, I want to write the second sentence using stike-out line(?), not underline. Maybe middle-line?????
I don't know "strike-out line" is correct but I think you can get what I mean.
Anyway this site seems not to support the function and eventually the two sentence had been shown identically.

I don't know if it's correct either, but it works.
The last icon in the toolbar at the top of your message is ABC. Just highlight the text you want to strike out, and click on that icon.
