"the meaning of always would do"

The following passage is part of a novel. I'd like to ask the meaning of "and always would do" in bold.

'Where are you going?' my grandmother would demand of her daughter, forty-six and a widow for fifteen years.
　'I'm going out.' My mother's reply would be even and she would look defiant as I imagine she had done at sixteen, and always would do.
'You're not going with that man are you?'
'What do you mean "that man"? You know who I'm going with and you know his name.'
'You should be ashamed of yourself, a woman of your age.' She was ready for a long session of baiting.

It is a future in the past.

This incident took place when the writer's mother was 46. At that past time, her defiance after the age of 46 was in the future. The writer is now looking back on this.

Can I ask one more thing? I made up the sentence below. Is the usage of "would" the same as the one in the novel? And is this correct? if not, I'd appreciate a good example.

In 1961 I met John Lennon in Liverpool. He would become famous worldwide only a couple of years later.

Yes, that is the same usage, and it is correct.

Thanks to fivejedjon, now I understand the usage of "would". However, I'm still not sure what exactly the whole sentence means.

Is it correct if I rewrite the sentence this way?

"...and she would look defiant as I imagine she had looked defiant at sixteen, and she would always look defiant even after this incident."
