"My number was so huge," does not seem like a complete thought to me.
***NOT A TEACHER***Yes, you are 100% correct: "My number was so huge" is usually not a complete thought. This kind of sentence is usually completed with a "that" sentence: My number was SO huge THAT I could not write it down on a piece of paper. Another example: It was SO hot (THAT I could fry an egg on the sidewalk).
