I'm a learner and I have a lot of doubts. I hope I get a clear picture of the language with all the doubts cleared here.
Can a sentence start with "Of interest"? If not, what can it be replaced with?
Example:
Of interest, while the oldest trees were tall and big, they did not bear flowers or fruits.

No. I think you probably want to use "interestingly".
Interestingly, even though the oldest trees were big and tall, they did not bear flowers or fruit.
Be careful with your use of "while". It's easy to get "while" and "whilst" confused, so here I have changed yours to "Even though".
"Tall and big" sounds unnatural but, strangely, we say "big and tall" quite frequently.
We also generally refer to "fruit" as the plural of "fruit". (It's a little more complicated than that but for the purposes of this sentence, that should suffice.)
You can start a sentence with anything if you aren't bothered about it sounding contrived or inelegant.Can a sentence start with "Of interest"?

The "West Lothian Question" concerns some of the problems caused by how English and Scottish people are represented in parliament, and how, at present, Scottish MPs can have a say on purely internal English affairs, but English MPs cannot always have an influence on what goes on in Scotland.
