    Default her : adjective ?

    "She greets everyone who comes into her spotlessly clean shop." Is it correct to say that "her" is an adjective ?

    It used to be classed as a possessive adjective, but in Britain it is is generally called a (possesive) determiner now.

    Context is always important; labelling is rarely important.
