Which sentence sounds good to say that someone will try to speak always in English( maybe during a vacation or a class) ?

You can't speak in English more than you can speak in English, therefore you're not going to. You can try to say more things in English than you are capable of.
Which sentence sounds good to say that someone will try to speak always in English( maybe during a vacation or a class) ?
Use sentence 1. It has the advantage of making sense.
