I have learned that we have to use "made of" in expressions such as:
made of leather
made of wool
But I have found some sentences in which we may see "made in"
made in leather
made in wool
Are these latter ones correct?

Sometimes, in an effort to sound more fancy, a writer will use a phrase such as, "Crafted in the finest Corinthian leather." It means the same as, "Made of leather."
"Made of wood," is simply correct without any elaboration. "Made in wood," could be correct, depending on the context, but usually with a different verb.
These days, you usually see "made in" followed by China![]()

I would just like to point out that we use "made of'' if the original form has NOT changed during the process of making, or it is at least still recognisable. Eg., "The table is made of wood."
If the original form is no longer recognisable, we use "made from". Eg., "Wine is made from grapes." (The grapes ceased to be grapes during the process; they have been changed into wine.![]()
