Hello
In those sentences : "If you don't eat,you get hungry" and " I'm sorry your mother is ill. I hope she gets better soon.
Why don't we say "you will get"/ "she will get" ?

With the first sentence, it's talking about a general truth and for that we use the present tense. The sentence simply means that not eating causes hunger.
In the second, after "I hope" we regularly use the present to indicate the future.
I hope I win the lottery.
I hope you have a good holiday.
Note: only one "s" in "Thanks".
