Is it right to say " A true leader to the spirit"?

2.) Don’t be surprised if you see him gulping bulk of food in no time

Is it right to say " buk of food"? Can it replaced by something else? Please clarify

1- in the spirit of? = in a similar way
2- I wouldn't use it- try 'lots of', also, 'gulp' is more used for liquids
