The meaning of the sentence is quite comprehensive, yet the structure of the writer is found rather not-so easy. would you mind helping me break down the structure of "more than just"?
could i rewrite the sentence as "By breaking up a text into manageable tasks, you are able to
reduce frustration"?

Hello,
In my (very) humble opinion, that sentence means something like:
When you break up a text into manageable tasks, you do more than only reduce frustration.
In other words: You reduce frustration, but you also do other things. (Maybe understand the text
better, etc.)

Here is a sentence that I have made up. It is not very good, but I hope that you get the idea:
When I try to answer someone's question, I do more than just reply to someone. That is, I also
get a chance to practice my typing, the chance to exercise my mind, and the chance to become
an active member of the usingenglish.com community.
