    Default on at or in

Can you say "I spend my holidays on a farm"? Doesn't this mean you were on the roof??

    No, it doesn't.

'I spend my holidays on a farm' is what we normally say.

"Farms" are large areas of land, not normally enclosed by a roof.

If you said you spent the time "on a farmhouse", then it would be very confusing as it would sound like you spent time on the roof of the main farm building.
