Default adjectives

can we use 'less' before all adjectives?
E.g. I am less tall than my father.

No. In your example sentence you could say, "I am not as tall as my father."

You can also say: I am shorter than my father.

Or: My father is taller than I am.

"less" often sounds strange. It doesn't make much sense to say 'Paris is less big than London', while @Paris is not as big as London' sounds fine.
