Take vs. taking
She saw him take money from them.
She saw him taking money from them.
Are these both correct?

Yes.
In the first, she saw the whole action. In the second, we know only that she saw him while he was in the process of taking. However, as the taking of money is normally a process of short duration, there may be little practical difference between the two.
