    How would I say: Ever since I could remember I...... OR
    Every since I can remember I ......? Or does it even matter?

    You probably want to say something along the lines of:

    For as long as I can remember I....

    "Every since" is definitely out. It's not a possible English construction.

    "Ever since" or "For as long as" are both common in most English countries; "For as long as" is preferable.
