This one can indeed. Just add an 's': My sentiments, but sediment is a mass noun so no plural required

Yes and NO

Sentiments (count noun)

Sediment (mass noun) NOTE: this could be said in some specialist contexts to refer to many DIFFERENT types of sediments, e.g. There were soft and hard compound sediments found during the excavation.
