and why is it correct?

All three of the following are acceptable:
- Come sit by the fireplace as we chat about me and you.
Come sit by the fireplace as we chat about you and me.
Come sit by the fireplace as we chat about us.
The word me is (or should be) always used in the objective case. The word I is (or should be) always used in the subjective case.
